I am not sure that complaints to the employment tribunal would be reliable. For one, bullying and harassment are rarely made the reason for filing a complaint. It is usually harassment. For another, most bullying and harassment cases either go unreported or are resolved informally.
I have statistics for the United States, not for here. It seems that 19% of American workers reported being a victim to harassment, that's close to 1 out of every 5. What's worse, 7% even reported threats of physical harm!
I think this is quite dated. A 2007 survey conducted by WBI-Zogby found that 13% of US employees are current victims of abuse while 24% have experienced being bullied before... while 12% have seen bullying happen to their colleagues!
In 2008, Judy Fisher-Blando noted that up to 3/4s of her respondents replied that they were being bullied!
That's weird. A 1997 study commissioned by the BBC showed that 53% of workers in the UK reported being victims of bullying, whether it is past or present. While 77% said they witnessed bullying at their workplaces! Ten years later, it seems that the statistics are the same!
If it helps, a 2004 UK National Workplace Bullying Advice Line report says that they got 9084 enquiries for that year and of that, a staggering 8125 of these calls are bullying cases!

I would think that we'd have the same kind of numbers here.

now that is a lot. But did they specify if it's 8125 instances or 8125 people???
